Brussetta With Frittatas
- Frittatas
- 12 large eggs
- 3/4 cup 2% milk
- 1 1/2 tablespoons garlic - minced
- 1/4 cup parmesan cheese
- 1 teaspoon salt
- 1 tablespoon black pepper
- Bruschetta topping
- 3 small tomatoes
- 2 cloves of garlic - minced
- Handful fresh basil - finely chopped
- salt, to taste
- black pepper, to taste
- Pre-heat the oven to 350u0b0 F.
- Whisk the eggs and milk in a large bowl.
- Add the rest of the ingredients and mix well.
- Spray a regular muffin tin with cooking spray.
- Pour the egg mixture in the greased muffin cups almost to the top.
- Bake for 12-13 minutes.
- Mix all ingredients in a small bowl, cover and refrigerate for about half an hour or until ready to serve.
- You can use store bought pesto.
- Spread a spoonful of pesto on each frittata.
- Top each frittata with the bruschetta mixture.
- Sprinkle some parmesan cheese for garnish.
