Brussetta With Frittatas

  1. Pre-heat the oven to 350u0b0 F.
  2. Whisk the eggs and milk in a large bowl.
  3. Add the rest of the ingredients and mix well.
  4. Spray a regular muffin tin with cooking spray.
  5. Pour the egg mixture in the greased muffin cups almost to the top.
  6. Bake for 12-13 minutes.
  7. Mix all ingredients in a small bowl, cover and refrigerate for about half an hour or until ready to serve.
  8. You can use store bought pesto.
  9. Spread a spoonful of pesto on each frittata.
  10. Top each frittata with the bruschetta mixture.
  11. Sprinkle some parmesan cheese for garnish.
