Neapolitan Spumone
- 2 c. milk
- 1 1/4 c. sugar
- 4 egg yolks
- 1 tsp. pure vanilla extract
- 1/4 tsp. almond extract
- 1 1/2 c. whipping cream
- 4 drops green food coloring
- 4 drops red food coloring
- 1/4 c. chopped candied cherries
- 1/4 c. chopped toasted almonds
- 1 Tbsp. diced candied orange peel
- 2 Tbsp. cocoa
- 1 Tbsp. rum
- Combine milk, 1 cup sugar, egg yolks and flavoring extracts. Cook, stirring, until custard begins to boil.
- Chill in freezer until softly frozen.
- Fold in half whipped cream.
- Divide into 2 equal parts.
- To 1 part, add green food coloring.
- To the other, add red food coloring, cherries, almonds and orange peel.
- Freeze partially, about 1 hour, stirring now and then, until spreading consistency.
- Mix remaining whipped cream with 1/4 cup sugar, cocoa and rum.
- Chill.
