Neapolitan Spumone

  1. Combine milk, 1 cup sugar, egg yolks and flavoring extracts. Cook, stirring, until custard begins to boil.
  2. Chill in freezer until softly frozen.
  3. Fold in half whipped cream.
  4. Divide into 2 equal parts.
  5. To 1 part, add green food coloring.
  6. To the other, add red food coloring, cherries, almonds and orange peel.
  7. Freeze partially, about 1 hour, stirring now and then, until spreading consistency.
  8. Mix remaining whipped cream with 1/4 cup sugar, cocoa and rum.
  9. Chill.
