How To Tame Your Leftover French Fries

  1. Process the leftover french fries in a food processor until they reach the consistency of small croutons. If you're adding fat like butter or olive oil, further process the fries until they're about the consistency of minced garlic.
  2. In a casserole dish, dutch oven or cast iron skillet, mix the processed fries, harissa, salsa, sour cream and confit with a wooden spoon. Top with the bread crumbs.
