Rolled Beef
- 1 1/2 lb. round steak, pounded thin
- 1/4 c. chopped onion (scallions)
- 1/4 c. cubed or ground pork
- 1/4 c. bread crumbs
- 1/4 c. grated Romano cheese
- 1 bunch parsley, chopped
- 1/2 c. chopped spinach or Swiss chard
- cold cuts (salami, ham)
- cheese, cubed (Cheddar, Provolone)
- 1/2 c. peas
- 3 hard-cooked eggs, sliced
- 2 Tbsp. extra virgin olive oil
- 1 c. chicken broth
- 3 Tbsp. tomato paste
- 1/2 c. dry red wine
- Place round steak on wax paper.
- On it, layer the onions, pork, bread crumbs, Romano cheese, parsley, spinach, cold cuts, cheese, peas and sliced eggs.
- Leave space around edges to allow for rolling.
- Roll steak and tie with string.
- Brown in olive oil. Add chicken broth, tomato paste and wine.
- Simmer on top of stove for 35 minutes.
