Mint Chocolate Hazelnut Muffins

  1. Preheat oven 375 degrees F
  2. Toast hazelnuts on medium heat in a small pan on the stovetop ~5-7 minutes or when you just smell the nuts
  3. Remove nuts from heat, allow to cool then chop nuts finely
  4. Meanwhile mash bananas, add sugar, egg, mint extract & applesauce in a large mixing bowl
  5. Stir dry ingredients into wet ingredients then fold chocolate chips & hazelnuts into the batter
  6. Place muffin liners in a muffin tin & fill liners 1/2 way full of batter
  7. Bake 15-18 minutes at 375 degrees F
