Instant Pot Moroccan-Spiced Rice

  1. Add olive oil to Instant Pot and select Saute setting
  2. Saute diced onion and minced garlic until ingredients start to brown (about 2-3 minutes)
  3. Add chicken broth, rice, golden raisins, and spices to Instant Pot
  4. Place lid on, and make sure indicator is set to Sealing
  5. Set for 10 minutes on HIGH using the Manual setting
  6. Once pressure has built up and the 10 minutes is complete, let pressure come down naturally for 10 minutes
  7. Let steam out by turning the indicator to Venting and open lid
  8. Add butter and fluff rice with a fork
  9. Serve immediately or store in a glass container in your refrigerator
