Instant Pot Moroccan-Spiced Rice
- 1 cup rice
- 1 1/2 cups chicken stock
- 2 tablespoons olive oil
- 2 garlic cloves (minced)
- 1/4 cup onion (diced)
- 1/2 cup golden raisins
- 1 teaspoon coarse salt
- 1 teaspoon black pepper
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cumin
- 2 tablespoons butter
- Add olive oil to Instant Pot and select Saute setting
- Saute diced onion and minced garlic until ingredients start to brown (about 2-3 minutes)
- Add chicken broth, rice, golden raisins, and spices to Instant Pot
- Place lid on, and make sure indicator is set to Sealing
- Set for 10 minutes on HIGH using the Manual setting
- Once pressure has built up and the 10 minutes is complete, let pressure come down naturally for 10 minutes
- Let steam out by turning the indicator to Venting and open lid
- Add butter and fluff rice with a fork
- Serve immediately or store in a glass container in your refrigerator
