Want An Alternative Egg This Easter? Try Cruga Biltong Scotch Egg

  1. Preheat oven to 180u0b0C/350u0b0F
  2. Spread 20g of pumpkin seeds on a baking tray and bake at 180u0b0C/350u0b0F for 5 minutes until the seeds are golden brown
  3. Peel shell off boiled egg and leave to one side
  4. Remove the skin and stone from the avocado and place in bowl
  5. Use a fork to mash the avocado until smooth and sprinkle chilli flakes on top
  6. Tip the Chilli Beef Biltong and cooled pumpkin seeds into the food processor and blend to crumbs
  7. Pour the Chilli Beef Biltong and pumpkin seed mix onto plate and leave to one side
  8. Add the wholemeal breadcrumbs into the bowl with avocado, add a pinch of salt and pepper and mix with fork
  9. Take the avocado mix and flatten between your hands
  10. Make sure the egg is dry, then wrap the mixture around it, molding it to completely cover the egg
  11. Once covered gently roll in the Chilli Beef Biltong and pumpkin seed crumb mix to coat
  12. Place on plate and refrigerate for 30 minutes
  13. Garnish with remaining pumpkin seeds and rocket to serve
