Chunky Chili
- 1 1/2 c. (1-inch) pieces diced onion
- 1 c. diced green bell pepper
- 2 Tbsp. coarsely chopped jalapeno pepper
- 3 cloves garlic, minced
- 1 lb. freshly ground turkey
- 2 (14 1/2 oz.) cans no-salt-added whole tomatoes (undrained), chopped
- 1 (16 oz.) can pinto beans (undrained)
- 1/2 c. frozen whole kernel corn
- 2 Tbsp. chili powder
- 1/4 tsp. ground red pepper
- 1/2 tsp. ground cumin
- 1/4 tsp. salt
- Coat a medium saucepan with vegetable cooking spray; place over medium heat until hot.
- Add onion and green pepper; saute 1 minute.
- Add jalapeno pepper and garlic.
- Saute an additional 3 minutes or until onion is tender.
- Add ground turkey; cook 5 minutes or until turkey is browned, stirring frequently.
- Add chopped tomatoes and remaining ingredients; stir well.
- Bring to a boil; reduce heat and simmer, uncovered, 20 minutes.
- Yields 6 servings.
