Oatmeal Raisin Cookies
- 1/2 c. raisins
- 1 1/2 c. quick oats
- 1/2 c. whole wheat flour
- 3/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 egg, lightly beaten
- 2 Tbsp. Crisco
- 1 Tbsp. honey
- 1 Tbsp. vanilla
- 1/4 c. sugar
- 1/4 c. brown sugar
- Grease a large baking sheet.
- Place the raisins in a small bowl, cover with hot water.
- Allow to soak for 10 minutes.
- In a large bowl combine to oats, flour, baking soda, cinnamon and salt. In a medium bowl combine the egg, Crisco, honey, vanilla, sugar and brown sugar.
- Add to the oats.
- Stir to mix well.
- Drain the raisins and stir into the bowl.
- Drop the dough by tablespoon onto the prepared baking sheet.
- Allow 2 inch space between them.
- Bake at 350 for 8 to 10 minutes or until lightly browned.
- Makes 24 cookies.
