Pineapple Chicken

  1. Quickly saute chicken in hot vegetable oil.
  2. Turn heat down to medium and add mushrooms.
  3. Mix 1 tablespoon soy sauce, onion powder and ginger.
  4. Add to chicken in frying pan.
  5. Mix cornstarch, remaining soy sauce and reserved pineapple juice.
  6. Add to chicken and stir until thickened.
  7. Add water if desired for thinner sauce. Add pineapple and oranges just before serving.
  8. Serve over hot white rice.
