Pineapple Chicken
- 1 1/2 to 2 lb. boneless chicken breasts, thinly sliced
- 2 Tbsp. vegetable oil
- 1 lb. mushrooms, sliced
- 2 Tbsp. soy sauce, divided
- 1 tsp. onion powder
- 1/4 tsp. ginger
- 2 Tbsp. cornstarch
- 15 oz. crushed or chunked Dole pineapple with juice (not syrup, reserve juice)
- 4 oz. mandarin oranges, drained
- rice
- Quickly saute chicken in hot vegetable oil.
- Turn heat down to medium and add mushrooms.
- Mix 1 tablespoon soy sauce, onion powder and ginger.
- Add to chicken in frying pan.
- Mix cornstarch, remaining soy sauce and reserved pineapple juice.
- Add to chicken and stir until thickened.
- Add water if desired for thinner sauce. Add pineapple and oranges just before serving.
- Serve over hot white rice.
