Easy Garden Vegetable Pie
- 1 c. chopped zucchini
- 1 c. cauliflower florets
- 1 c. sliced mushrooms
- 1/2 c. chopped green peppers
- 1 1/2 c. milk
- 3/4 c. Bisquick baking mix
- 1 tsp. salt or salt substitute
- vegetable cooking spray
- 1 c. chopped broccoli
- 1 c. chopped carrots
- 1/2 c. chopped onions
- 1 c. shredded Cheddar or Monterey Jack cheese
- 3 eggs
- 1/4 tsp. pepper
- Spray pie plate with vegetable cooking spray.
- Steam zucchini, broccoli, cauliflower florets, carrots, mushrooms, onions and green peppers in about 1/2 cup of water until tender.
- Drain and place in pie plate.
- Stir in cheese.
- Beat milk, Bisquick, eggs, salt and pepper; pour over vegetables.
- Bake at 400u0b0 for 35 to 40 minutes.
- Let stand 5 minutes before cutting.
