Brandy Old Fashioned Jam
- 8 cups pitted cherries (frozen cherries are your best bet around the holidays. I recommend using a mix of half sweet and half tart cherries)
- 2/3 cup freshly squeezed orange juice
- 2 tablespoons grated orange zest
- 1 1/2 cups sugar
- 1/2 cup brown sugar
- 1/4 cup brandy
- 2 teaspoons Angostura bitters
- Place cherries, orange juice, and orange zest in a large pot over medium high heat. Cook until cherries are soft and releasing juice, about 10-15 minutes.
- Transfer jam to a blender, or use an immersion blender to blend most of the cherries into a smoother consistency. If desired, you can leave a few whole cherries in there for added texture. Return blended cherries to medium high heat.
- Add the sugars and stir to mix thoroughly. Bring to a boil and continue cooking over medium high heat, stirring often, until mixture thickens, about 25-30 minutes.
- Remove from heat and stir in the brandy and bitters. Ladle jam into jars and seal tightly. Jam will keep in refrigerator for 2-3 weeks.
