Mixed Berry & Chamomile Mochi Pancakes

  1. In a medium size bowl combine the the flour, rice flour, sugar, baking powder, baking soda, salt, egg yolk, yogurt, buttermilk, and butter until just incorporated.
  2. Then add in the egg white until just combined.
  3. Heat a non stick skillet over medium heat and lightly grease the pan with butter.
  4. Scoop out about 1/4 cup of batter and cook for 2-3 minutes or until you see bubbles around the edge.
  5. Flip them over and then cook for another 1-2 minutes. rnRepeat until all the batter is gone.
  6. Stack your pancake on to a plate and dollop on as much whip cream as you'd like and finish it off with the berry compote! Enjoy warm!
  7. In a small saucepan warm the cream and the chamomile tea bag together. You do not want it to boil. You just want it to be hot. Let it steep for 5 minutes and then transfer to the fridge.
  8. Once the cream has cooled back down whip the heavy cream and sugar until you get soft peaks.
  9. In a saucepan with the flame on medium heat combine the frozen berry mix and the honey together.
  10. Let it come to a boil and cook for 5 minutes.
  11. Take it off the heat and let it cool until you are ready to use.
