Meatloaf With Mushrooms And Sharp Cheddar
- 1 tablespoon butter
- 8 ounces cremini or white button mushrooms. sliced thickly
- salt and pepper to taste
- 1 cup sharp white cheddar cheese, grated
- 2 slices sandwich bread, cubed
- 1 egg
- 1.5 pounds ground beer (80/20) (more if you are making the extra kids patties)
- Preheat oven to 350. In a large skillet, heat the butter over medium heat. Cook mushrooms, stirring once or twice, until deep golden brown, about 5 minutes per batch. Season with salt and pepper. Add garlic, saute for another minute of two. Let cool in pan for about ten minutes, then transfer to large mixing bowl, along with the ground beef.
- Add fsharp cheddar, bread, and egg to the bowl and mix until thoroughly combined. Salt and pepper to taste. Place meatloaf in glass 13x9 inch pan forming it into a 10 inch loaf. Bake until cooked through, about 45 minutes. Let rest 10 minutes before serving.
- If you have picky kids, make sure you buy 1 3/4 pounds, or 2 pounds of ground beef. Shape into patties, salt to taste, and lay next to the meatloaf. They will be done sooner than the meatloaf, probably about 25 minutes, depending upon how thick you have made the patties.
