Fold-Over Tortilla Beef Bake
- 2 lb. ground beef
- 4 (14 1/2 oz.) cans stewed tomatoes
- 2 c. enchilada sauce
- 4 tsp. cumin
- 1 tsp. pepper
- 12 oz. cream cheese, softened
- diced green chili peppers to taste
- 8 oz. Monterey Jack cheese, shredded
- 1 to 2 chopped onions
- 1 tsp. salt
- 24 (6-inch) tortillas
- In skillet, cook beef and onions until meat is brown; drain off fat.
- Stir in tomatoes, enchilada sauce, cumin, salt, pepper and chili pepper.
- Cover and simmer 5 minutes.
- Pour half of the meat sauce into a large, flat baking pan.
- Spread tortilla with cream cheese and fold over and arrange on meat mixture.
- Pour remaining meat mixture over this.
- Top with grated Monterey Jack cheese.
- Bake at 350u0b0 for 15 minutes or until hot through.
