Tomato Basil Chicken & Ziti
- Chicken
- 4 chicken breasts
- 1 tablespoon olive oil
- 1/3 cup flour
- 1 teaspoon salt
- 1 teaspoon Mrs. Dash onion & herb seasoning
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Mrs. Dash Italian Medley
- 16 ounces ziti pasta, cooked and strained
- Burrata cheese
- Fresh Tomato Sauce
- 12 Roma tomatoes, chopped
- 3 garlic cloves, minced
- 3-4 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 12 basil leaves, finely chopped
- Heat a deep skillet over medium heat, and add the olive oil
- Dip the chicken in flour coating both sides, place in skillet.
- Sprinkle the seasonings over the chicken.
- Cook 4-5 minutes on each side until fully cooked with no pink in the center.
- Cut the chicken into strips, and set aside.
- Wipe out the skillet with paper towels, and add a Tbsp of olive oil and the garlic.
- Cook 1 minute, then add the tomatoes, salt and pepper.
- Mix well, and retain a light boil stirring often for 10-15 minutes until the tomatoes break down.
- Keep drizzling 1-2 tsp of olive oil every few mintes.rnAdd fresh basil and mix well.
- To serve the meal, scoop the ziti on a plate, top with fresh tomato sauce, strips of chicken, drizzle 1-2 Tbsp of Burrata cheese, then top with fresh basil.
