Lumpia

  1. Combine the first 12 ingredients, setting the egg white aside in a saucer.
  2. Heat oil to 375u0b0.
  3. Place 2 tablespoons of filling in
  4. 1 corner of a single lumpia wrapper.
  5. Roll up the wrapper, turning each end in like a Chinese spring roll or egg roll. Moisten
  6. last
  7. corner
  8. with
  9. egg white, so that it will stick. Place
  10. roll
  11. on
  12. tray,
  13. seam
  14. side
  15. down.
  16. Cover
  17. with plastic
  18. as you
  19. continue to roll the others.
  20. Fry a few at a time
  21. until golden brown.
  22. Place on a cookie sheet, with paper towels,
  23. in the oven on warm until all are fried.
  24. Serve with banana sauce (optional), available at oriental food stores.
