Florentine Stuffed Turkey Breast Half
- 1 (1 to 3 lb.) bone-in turkey breast half, skin removed
- 2 Tbsp. margarine, divided
- 1 tsp. thyme
- 2 fresh garlic cloves, sliced
- 1 c. chopped onion
- 1 c. chopped celery
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
- 3/4 c. chicken broth or water
- 3 slices wheat bread, cubed
- 1/2 tsp. salt
- 1/2 c. walnut pieces, toasted
- 1/2 c. chopped Granny Smith apple
- 1/4 tsp. nutmeg
- 1/4 tsp. pepper
- Rub turkey breast with 1 tablespoon margarine, thyme and garlic.
- In large, nonstick skillet, over medium-high heat, saute onion and celery in one tablespoon margarine for 4 to 5 minutes or until soft.
- Fold in spinach, broth, bread, walnuts, apple, salt, nutmeg and pepper until mixture is well combined.
