Lizzie'S Fruit Cake Cookies
- 2 lb. candied cherries
- 2 lb. candied pineapple
- 1 lb. dark raisins or chopped dates
- 1 lb. white raisins
- 6 c. chopped pecans
- 6 1/2 c. all-purpose flour, divided
- 1/2 c. margarine
- 1 1/2 c. brown sugar, firmly packed
- 4 eggs
- 1 c. pineapple juice
- 2 Tbsp. milk
- 1 tsp. ground cinnamon
- 1 tsp. ground allspice
- 1 tsp. ground nutmeg
- 1 tsp. ground cloves
- 3 tsp. soda
- Cut fruit into small pieces. Combine fruit and nuts. Dredge in 1 cup of flour and set aside. Cream margarine and sugar. Add eggs, one at a time, beating well after each addition. Add pineapple juice, milk and dry ingredients. Mix well. Add fruit and nuts. Work well with hands so fruit is well mixed. Drop by teaspoonfuls onto greased cookie sheet. Bake at 275u0b0 for 12 to 15 minutes. Yields
