Curried Rabbit With Vegetables
- 1 to 2 rabbits, dressed
- 1/2 c. flour
- 2 tsp. salt
- 1 1/2 tsp. curry powder
- 1/4 tsp. paprika
- vegetable oil
- 8 potatoes, halved
- 10 carrots, sliced
- 1 onion, sliced
- 2 bay leaves
- 1 c. sour cream
- 1 tsp. garlic powder
- Cut up rabbit into serving size pieces.
- Combine flour, salt, curry powder and paprika in a paper or plastic bag.
- Add the rabbit pieces and shake until each piece is thoroughly covered. Brown the meat in oil in a large skillet.
- Add 1 cup water, cover and simmer for about 1 hour.
- Add the vegetables and the bay leaves; cook an additional 30 minutes or until carrots are tender. Remove rabbit and vegetables.
- Add sour cream and garlic powder to the skillet.
- Heat until thickened for gravy.
