Old-Fashioned Corn Relish(Microwave Recipe)

  1. In 1-quart casserole, combine corn and 2 tablespoons of water; cook, covered, at High for 6 to 7 minutes, stirring once.
  2. Drain in colander.
  3. In same casserole, mix sugar and cornstarch.
  4. Stir in vinegar and 1/3 cup water.
  5. Add corn, celery, green pepper, pimento, onion and seasonings.
  6. Cook, uncovered, at High for 5 minutes until mixture is thickened and bubbly, stirring after each minute.
  7. Cook, covered, at High for 3 minutes more.
  8. Cool.
  9. Chill thoroughly.
  10. Stir before serving.
  11. Makes 2 cups.
