Old-Fashioned Corn Relish(Microwave Recipe)
- 1 (10 oz.) pkg. frozen corn
- 2 Tbsp. water
- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1/2 c. vinegar
- 1/3 c. cold water
- 2 Tbsp. finely chopped celery
- 2 Tbsp. finely chopped green pepper
- 2 Tbsp. chopped pimento
- 1 Tbsp. chopped onion
- 1 tsp. ground turmeric
- 1/2 tsp. dry mustard
- In 1-quart casserole, combine corn and 2 tablespoons of water; cook, covered, at High for 6 to 7 minutes, stirring once.
- Drain in colander.
- In same casserole, mix sugar and cornstarch.
- Stir in vinegar and 1/3 cup water.
- Add corn, celery, green pepper, pimento, onion and seasonings.
- Cook, uncovered, at High for 5 minutes until mixture is thickened and bubbly, stirring after each minute.
- Cook, covered, at High for 3 minutes more.
- Cool.
- Chill thoroughly.
- Stir before serving.
- Makes 2 cups.
