Diet Smucker'S Chicken Salad With Wild Rice
- 4 (4 oz.) skinless boneless chicken breasts
- 3 1/2 c. cooked wild rice
- 1 c. sliced green onions
- 1 c. seedless green grapes, halved
- 1/4 c. chopped pecans, toasted
- 1 Tbsp. grated orange rind
- 1 c. Smucker's sugar-free orange marmalade
- 1/3 c. raspberry vinegar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- Heat chicken over medium-high heat until hot and cook each side for about 2 minutes or until brown. Put chicken in 11 x 7-inch baking dish. Bake at 450u0b0 for 20 minutes or until cooked through. Then cool and cut into 1/4-inch strips. In large bowl, combine the chicken, rice, green onions, grapes and pecans. Toss well and set aside. In small bowl, combine orange rind and next 4 ingredients. Stir well. Pour over the mixture. Toss well. Serve. Makes 7 servings.
