My Favourite Rajma Chawal
- Rajma - Kidney beans in tomato and onion
- 1 cup Red Kidney beans washed, soaked almost for 6 hours and boiled
- 1 medium sized potato boiled
- 1 medium sized chopped tomato
- 1 medium sized chopped onion
- 1 tablespoon Garlic chopped
- 2 tablespoons oil
- 1 teaspoon Cumin seeds
- 2 cloves
- 1 Bay leaf
- 1 Stick of cinnamon
- 1.5 teaspoons Red Chili powder
- 1 teaspoon Turmeric powder
- 1.5 teaspoons Corriander -cumin powder
- 1.5 teaspoons Garam masala
- Corriander leaves for garnishing
- salt to taste
- Cumin Rice
- 1 tablespoon Ghee
- 1 teaspoon Cumin seeds
- 1 cup Rice washed and soaked for half an hour
- 1 cup Water
- 2 Cloves
- Some parsley or coriander leaves
- salt to taste
- Take oil in a pan, add cumin seeds to it after few seconds,add cloves, cinnamon stick, bay leaf and add the garlic and onions and saute till the onions are translucent. Add the tomatoes and cook it till the tomatoes look cooked, add all the dry spices and mix it well. After few minutes , add the boiled Kidney beans and mash the boiled potato and add it to the beans mixture. Add 1 cup of water and let it simmer for 5 to 10 minutes.
- Garnish it with coriander leaves
- Heat 1/2 tbsp ghee in a pan, add the cumin seeds and cloves, then the washed rice , toast the rice a little while and then add the salt and water and cook it till the rice is cooked.
- Once cooked , drizzle the remaining 1/2 tbsp of ghee and chopped coriander leaves to it. Serve it with Rajma, along with raita or papad and pickle. rnYou can also serve it with roti or chapati also..
