D. A.'S Best Spaghetti Sauce
- 5 qt. fresh peeled or canned tomatoes
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 lb. ground beef
- 1 lb. fresh mushrooms, sliced
- 1 Tbsp. oregano
- 1 Tbsp. sweet basil
- 1 Tbsp. thyme
- 1 (12 oz.) can tomato paste
- 3/4 c. sugar
- 1/2 c. Parmesan cheese
- 2 to 3 bay leaves
- Brown ground beef and garlic in a large stockpot in a tablespoon of olive oil.
- When meat is almost cooked, add mushrooms and onions; continue browning until vegetables are slightly tender. Drain meat mixture.
- Add oregano, basil, thyme, bay leaves and tomatoes.
- Bring almost to a boil, lower heat and simmer for 2 to 3 hours.
- Add tomato paste, sugar and Parmesan cheese.
- Continue simmering for 1 more hour.
- Serve over your favorite pasta.
- Recipe makes approximately 1 gallon of sauce.
- Freezes in Ziploc bags well for another day.
