Hot Crab Meat Souffle
- 12 slices bread
- 1/2 c. mayonnaise
- 1 can mushroom soup
- 1 chopped onion
- 1 c. celery, chopped
- 5 eggs, beaten slightly
- 1/4 c. green pepper, chopped
- 1 c. grated sharp cheese
- 1 lb. crab meat
- 3 c. milk
- 2 tsp. vermouth
- Put 6 slices of bread, diced, in a long baking dish.
- Mix crab meat, mayonnaise, onion, green pepper, celery and cheese and spread over bread.
- Trim crusts from remaining 6 slices of bread and place over crab meat mixture.
- Mix eggs, milk and vermouth and pour over mixture.
- Place in refrigerator overnight.
- Take out 2 1/2 hours before serving.
- Bake 20 minutes in a 325u0b0 oven.
- Remove from oven; spread mushroom soup over top and bake 1 hour.
- Serves 10.
