Ham And Cheese Quiche
- 1 (9-inch) pie shell
- 1/2 c. grated Cheddar cheese
- 1/2 c. grated Swiss cheese
- 2 c. half and half
- 1 Tbsp. chopped chives
- 2 tsp. instant minced onion
- 1/2 tsp. curry powder
- 1/4 tsp. salt
- dash of hot pepper sauce
- 4 eggs, beaten
- 1/2 c. finely chopped ham
- Fill cooked shell with the cheeses; set aside.
- Mix together cream, chives, onion, curry powder, salt and pepper in a 4 cup measure or 1-quart casserole dish.
- Microwave on High (100%) for 2 to 2 1/2 minutes or until steaming.
- Stir a small enough amount of hot cream into eggs; stir egg mixture into the remaining hot cream. Pour in shell.
- Sprinkle with ham.
- Microwave for 12 to 14 minutes or until a knife comes out clean.
- Turn dish a half turn halfway through cooking.
- Yield:
- 6 to 8 servings.
