*Whole Wheat Rolls

  1. In a large bowl, pour in scalded milk.
  2. Add salt, shortening, 5 tablespoons sugar and beaten eggs.
  3. In a small bowl, combine 1 tablespoon sugar and yeast with the warm water.
  4. Let yeast mixture set for at least 10 minutes and then blend with the ingredients in a large bowl.
  5. Add 1 1/2 cups whole wheat and 1 1/2 cups white flour.
  6. Blend this mixture to a soft dough.
  7. Continue to gradually add the rest of the flours, remembering to keep the dough soft. Keeping the dough soft is the real secret to making light rolls.
