Harvest Skillet Lentils

  1. Cook lentils according to Skillet Popped Lentils instructions recipernhttp://skinnyfitalicious.com/skillet-popped-lentils-with-parsley/
  2. Heat a skillet to medium high heat & add extra virgin olive oil
  3. Add butternut squash & cook 10 minutes stirring frequently
  4. Once squash has browned a bit, add diced apples & peppers with spices & orange zest
  5. Cook until veggies are tender about 7-8 minutes
  6. Once veggies are tender, add apple cider vinegar & lentils to the skillet
  7. Toss to combine & cook 2-3 minutes more
  8. Add chopped parsley & serve immediately
