Layered Potato 'N Ham Bake
- 1 (6 oz.) pkg. Betty Crocker hash brown potato mix
- 4 c. very hot water
- 1 tsp. salt
- 1 (17 oz.) can whole kernel corn, drained
- 1/3 c. chopped green bell pepper
- 1/3 c. chopped onion
- 1 c. cut up fully cooked smoked ham (about 3/4 lb.)
- 1 1/2 c. shredded process American cheese (6 oz.)
- 1 c. milk
- 1/4 c. margarine or butter, melted
- 1 egg
- 1/3 c. Bisquick baking mix
- 1 Tbsp. sugar
- 1/4 tsp. pepper
- 1/4 tsp. curry powder
- Heat oven to 350u0b0.
- Cover potatoes with water in medium bowl. Stir in salt.
- Let stand uncovered 15 minutes.
- Drain thoroughly. Layer half each of the potatoes, corn, bell pepper, onion, ham and cheese in ungreased square pan, 9 x 9 x 2-inch.
- Repeat.
- Mix milk, margarine and egg.
- Beat in baking mix, sugar, pepper and curry powder until smooth.
- Pour over mixture in pan.
- Bake 50 to 60 minutes or until top is golden brown and center is set.
- Makes 6 servings.
