Sweet And Sour Pork
- 1 Tbsp. shortening
- 1 1/2 lb. lean pork shoulder, cut into 2 x 1/2-inch strips
- 1 (20 oz.) can pineapple chunks
- 1/4 c. firmly packed light brown sugar
- 2 Tbsp. cornstarch
- 1/4 c. vinegar
- 1 Tbsp. soy sauce
- 3/4 c. green pepper, cut into strips
- 1 medium, onion, sliced
- hot cooked rice
- In a large skillet, brown pork in fat.
- Add 1/4 cup water; cover and simmer until tender (about 1 hour).
- Drain pineapple, reserving syrup.
- Combine sugar and cornstarch.
- Add pineapple syrup, vinegar, soy sauce and salt.
- Add cornstarch mixture, pineapple, green pepper and onion rings to skillet.
- Cook (continue stirring) over medium heat until mixture thickens. Cover and simmer 5 minutes longer.
- Serve over cooked rice. Makes 6 servings.
