Carrot And Zucchini Bars
- 1 1/2 c. all-purpose flour
- 3/4 c. packed brown sugar
- 1 tsp. baking powder
- 1/2 tsp. ground ginger
- 1/4 tsp. baking soda
- 2 slightly beaten eggs
- 1 1/2 c. shredded carrots
- 1 c. shredded zucchini
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 1/2 c. cooking oil
- 1/4 c. honey
- 1 tsp. vanilla
- Cream Cheese Frosting
- In large mixing bowl, stir together flour, brown sugar, baking powder, ginger and baking soda.
- In another bowl, stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey and vanilla. Add carrot mixture to flour mixture; stir until just combined. Spread batter in ungreased 13 x 9-inch pan.
- Bake at 350u0b0 for about 25 minutes.
- Cool.
- Frost with Cream Cheese Frosting.
- Store, covered, in refrigerator.
- Makes 36 bars.
