Rock Candy

  1. In small saucepan, combine sugar, water, corn syrup and salt. Stir until sugar dissolves.
  2. Cover and bring to a rolling boil. Remove lid.
  3. Place candy thermometer in pan and cook to 250u0b0.
  4. Add food coloring and continue cooking to 300u0b0.
  5. Remove from heat at 285u0b0 to 290u0b0 as temperature will continue rising to 300u0b0.
  6. Let cool a few minutes.
  7. Add flavoring oil and cover 5 more minutes. Pour into a buttered 7 x 10-inch pan.
  8. Cut with shears into strips as soon as cool enough to handle.
  9. Then cut into small pieces and dust with confectioners sugar.
  10. This will keep them from sticking together.
