Potato Rolls

  1. In a large bowl, thoroughly mix 2 cups flour, sugar, salt and undissolved dry yeast.
  2. Combine water and shortening in a saucepan.
  3. Heat over low heat until liquids are warm.
  4. (Shortening does not need to melt.)
  5. Gradually add to dry ingredients and beat 2 minutes at medium speed of mixer, scraping bowl occasionally. Add 3/4 cup flour, or enough flour to make a thick batter, eggs and mashed potatoes.
  6. Beat at high speed 2 minutes, scraping bowl occasionally.
  7. Stir in enough additional flour to make a soft dough.
  8. Turn onto lightly floured board.
  9. Knead until smooth and elastic.
  10. Place greased side up in a large Tupperware greased bowl.
