Potato Rolls
- 1 1/2 c. water
- 1 pkg. dry yeast
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 2/3 c. shortening
- 2 eggs
- 1 c. warm mashed potatoes
- 7 to 7 1/2 c. flour
- In a large bowl, thoroughly mix 2 cups flour, sugar, salt and undissolved dry yeast.
- Combine water and shortening in a saucepan.
- Heat over low heat until liquids are warm.
- (Shortening does not need to melt.)
- Gradually add to dry ingredients and beat 2 minutes at medium speed of mixer, scraping bowl occasionally. Add 3/4 cup flour, or enough flour to make a thick batter, eggs and mashed potatoes.
- Beat at high speed 2 minutes, scraping bowl occasionally.
- Stir in enough additional flour to make a soft dough.
- Turn onto lightly floured board.
- Knead until smooth and elastic.
- Place greased side up in a large Tupperware greased bowl.
