Braised Cabbage
- 1 tablespoon olive or vegetable oil
- 1 onion, chopped
- 2 fresh green chilies, such as serrano or jalapeno, minced
- 4 strips bacon, chopped (optional)
- 1 small cabbage, cored and shredded
- 2 or 3 small carrots, finely chopped
- 1/2 teaspoon coarse salt
- 1/2 cup chicken broth or water
- Heat a large skillet over high heat. Swirl in the oil. When it shimmers, add the onions, chilies, and bacon. While stirring, saute until the bacon starts to turn golden brown and the onions begin to caramelize, 3 to 5 minutes.
- Add the cabbage, carrots, and salt and stir to combine. Pour in the broth or water, reduce the heat to medium-low, and continue to cook, stirring occasionally, until the cabbage is tender, about 15 to 20 minutes. Add a small amount of water if needed to avoid scorching.
