Sugar-Free Carrot Cake
- 1/2 c. Sugar Twin
- 4 eggs (can use Egg Beaters)
- 1/2 c. corn oil (can use applesauce)
- 1 1/2 c. flour (plain)
- 1 box sugar-free vanilla pudding
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/4 c. water
- 1 Tbsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. lite salt
- 3/4 c. pecans, chopped
- 2 c. carrots, grated
- 15 oz. unsweetened crushed pineapple
- Preheat
- oven to 350u0b0.teat eggs in large mixing bowl. Add sugar, water and oil.
- Sift together dry ingredients.
- Add slowly totgg mixture, mixing well.
- Add carrots, pecans and pineapple. Mix
- untiltell
- combined.
- Spray 9 x 13-inch pan with
- vegetable spray.
- Flour lightly.
- Bake approximately 40 minutes.
- Cool. Frost with Sugar-Free Cream Cheese Icing.
