Pat'S Perfect Sesame Noodles

  1. Combine sesame oil and canola oil in a saucepan.
  2. Add the garlic and ginger and saute until soft.
  3. Do not allow to become crisp and brown.
  4. Add vinegar, soy sauce, hot oil and sugar; boil for a few seconds.
  5. Remove from heat.
  6. Cook pasta, then rinse thoroughly with cold water.
  7. Drain.
  8. Mix noodles with sauce and toss.
  9. Toss noodles occasionally so they all get a chance to marinate in sauce.
  10. Cover and refrigerate overnight.
  11. Before serving, bring to room temperature.
  12. Sprinkle with cilantro.
