Apple Oat Bran Muffins(Healthful Eating)
- 3 c. oat bran
- 2 1/2 c. whole wheat flour
- 1/2 tsp. salt
- 2 tsp. baking soda
- 2 eggs
- 1/4 c. molasses
- 1/4 c. olive oil or canola
- 2 c. apple juice concentrate
- 2 c. skim milk
- 2 1/2 c. Granny Smith apples (about 2 large apples)
- 1 1/2 c. raisins
- In a small bowl, combine oat bran, whole wheat flour, salt and baking soda; set aside.
- In a large mixing bowl, beat eggs; stir in molasses.
- Mix in olive oil, apple juice concentrate and skim milk.
- Gradually add flour mixture using a wire whisk.
- Mix ingredients just until moistened.
- Stir in chopped apples and raisins.
- Pour into paper-lined muffin pans.
- Bake at 350u0b0 for 20 to 25 minutes or until toothpick inserted into center comes out dry.
