Chicken Parmesan
- boneless chicken breasts
- 2 (14 1/2 oz.) cans Del Monte Italian Recipe stewed tomatoes
- 2 Tbsp. cornstarch
- 1/2 tsp. oregano
- 1/4 c. grated Parmesan cheese
- shredded Mozzarella cheese
- cooked noodles or rice
- Preheat oven to 425u0b0.
- Place chicken in single layer in baking dish; cover with foil and bake for 20 minutes.
- Remove from oven; drain and wash baking dish.
- In saucepan, combine tomatoes, cornstarch and oregano.
- Cook, stirring constantly, until thickened.
- Place small amount of tomato mixture in bottom of baking dish. Cover with either cooked noodles or rice.
- Add chicken.
- Pour remaining tomatoes over; sprinkle with Parmesan cheese and return to oven for about 15 minutes.
- Remove from oven and cover with Mozzarella cheese.
- Return to oven for about 10 minutes or until Mozzarella cheese is melted.
