Chicken Parmesan

  1. Preheat oven to 425u0b0.
  2. Place chicken in single layer in baking dish; cover with foil and bake for 20 minutes.
  3. Remove from oven; drain and wash baking dish.
  4. In saucepan, combine tomatoes, cornstarch and oregano.
  5. Cook, stirring constantly, until thickened.
  6. Place small amount of tomato mixture in bottom of baking dish. Cover with either cooked noodles or rice.
  7. Add chicken.
  8. Pour remaining tomatoes over; sprinkle with Parmesan cheese and return to oven for about 15 minutes.
  9. Remove from oven and cover with Mozzarella cheese.
  10. Return to oven for about 10 minutes or until Mozzarella cheese is melted.
