Farfel Pudding
- 3 eggs
- 1/4 c. sugar
- 2 c. farfel or 4 matzo crackers, coarsely crushed
- 2 c. cream-style cottage cheese
- 1 c. dairy sour cream
- 1/3 c. margarine, melted
- 1/2 c. raisins
- 1/2 c. apricot preserves
- 1/2 c. finely chopped nuts
- 2 Tbsp. sugar
- 1 tsp. ground cinnamon
- In mixing bowl, beat eggs until light; gradually beat in 1/4 cup sugar until fluffy.
- Soak farfel in cold water; squeeze out excess water.
- Add farfel, cottage cheese, sour cream, margarine, raisins and preserves to egg mixture; blend well.
- Turn into a 13 x 7 1/2 x 2-inch baking dish.
- Mix nuts, sugar and cinnamon. Sprinkle on top.
- Bake at 350u0b0 for 40 to 50 minutes.
- Serve warm or cool.
- Serves 10 to 12.
- A good recipe for a Seder.
