Stir-Fry Chicken And Vegetables
- 1/2 lb. Kluski egg noodles
- 1 to 2 Tbsp. olive oil
- 1 Tbsp. butter or margarine
- 2 boned and skinless chicken breasts, cut into strips
- 1/2 medium red onion, halved lengthwise and thinly sliced
- 1 medium zucchini, cut into 1-inch cubes
- 1 c. sliced mushrooms
- 1 large carrot, shredded
- 1 clove garlic, minced
- 1 tsp. basil leaves
- 1 tsp. salt (optional)
- 1/4 to 1/2 tsp. pepper
- Heat oil and butter in skillet. Add chicken and onion. Stir-fry 2 minutes. Cook noodles according to directions. Add remaining ingredients to skillet, except for noodles. Stir-fry until chicken is no longer pink and vegetables are crisp-tender. Add noodles; toss to mix. Heat through. Serve immediately. Makes 4 to 6 servings.
