Biscotti
- 1/2 c. butter or shortening
- 1 c. sugar
- 3 eggs
- 3 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. anise flavoring
- 1 c. coarsely chopped almonds
- Cream the shortening with the sugar thoroughly.
- Add eggs, one at a time, and beat well. Sift flour. Measure and sift again with the baking powder and salt. Add to creamed mixture. Stir in flavoring and almonds.
- Turn mixture onto a lightly floured board and knead until smooth. Divide dough into thirds.
- Form into 3 rolls the length of the cookie sheet and 1 1/2-inches in diameter. Bake in moderate oven at 350u0b0 for 30 minutes or until rolls are firm to the touch. While still warm, cut rolls crosswise into slices 3/4-inch thick.
- Lay these, cut side down, on cookie sheet and bake 10 minutes longer to toast.
