Spinach Patties
- 1 pkg. frozen chopped spinach, thawed, drained and squeezed of all moisture
- 1 medium yellow onion, chopped
- 1 c. fine dry bread crumbs, (seasoned or plain, homemade or commercial)
- 3 to 4 large eggs
- 4 oz. shredded grated Swiss cheese (Cheddar or Gruyere also work well)
- 4 Tbsp. Parmesan cheese, grated
- seasonings (m.s.g., seasoned salt, pepper to taste)
- herbs (parsley, basil, oregano, etc.) to taste
- Break
- eggs into large mixing bowl;
- add
- all
- remaining ingredients.
- Mix well as for meat loaf.
- Shape
- mixture into 4 patties, for main course; 8 smaller portions
- for
- an appetizer course. Saute over medium heat in skillet coated
- with no stick cooking spray (Pam) until crispy and browned,
- about 5 minutes. Turn
- patties
- andtontinue to cook until brownedtnd
- cooked through,
- another
- 5 to 10 minutes.
- Keep hot
- until
- ready
- to serve.
- These are especially good with fresh
- tomato
- sauce and freshly grated Parmesan cheese, a green salad and French bread. Makes 2 main course servings or 4 appetizer servings.
