Spinach Patties

  1. Break
  2. eggs into large mixing bowl;
  3. add
  4. all
  5. remaining ingredients.
  6. Mix well as for meat loaf.
  7. Shape
  8. mixture into 4 patties, for main course; 8 smaller portions
  9. for
  10. an appetizer course. Saute over medium heat in skillet coated
  11. with no stick cooking spray (Pam) until crispy and browned,
  12. about 5 minutes. Turn
  13. patties
  14. andtontinue to cook until brownedtnd
  15. cooked through,
  16. another
  17. 5 to 10 minutes.
  18. Keep hot
  19. until
  20. ready
  21. to serve.
  22. These are especially good with fresh
  23. tomato
  24. sauce and freshly grated Parmesan cheese, a green salad and French bread. Makes 2 main course servings or 4 appetizer servings.
