Kentucky Hot Paws(Yields 60 Servings)

  1. In heavy saucepan, blend flour into butter until smooth.
  2. Cook over low heat for 2 minutes.
  3. Gradually add milk; cook, stirring constantly, over moderate heat until thickened.
  4. Stir in cheese with a whisk.
  5. Take 1 cup of sauce and blend into beaten eggs, then add to remaining sauce, stirring constantly for about 1 minute.
  6. Stir in lemon juice, salt and pepper.
  7. Arrange toasted bread on pan.
  8. Top each bread slice with slice of turkey and 1/2 cup of sauce.
  9. Garnish with grated cheese, if desired, and a slice of crisp bacon or bacon chips.
  10. Cook 1 minute in moderate oven.
