Egyptian Rice And Lentils(Healthy Recipe)

  1. Soak lentils in some hot water for 1 hour.
  2. Drain and place in a saucepan; cover with water by 2 inches.
  3. Bring to a boil; add 1/2 teaspoon of salt.
  4. Reduce heat and simmer 30 minutes or until tender.
  5. Saute chopped onion in 1 tablespoon of olive oil until golden.
  6. Add cumin, cinnamon and rice.
  7. Stir to coat with oil. Add water and lentils with their liquid, 1/4 teaspoon of salt and pepper.
  8. Stir; bring to a boil.
  9. Reduce heat and cover.
  10. Cook 25 minutes, until liquid is absorbed.
