Egyptian Rice And Lentils(Healthy Recipe)
- 1 c. brown lentils
- 3/4 tsp. salt
- 1 Tbsp. plus 1 1/2 tsp. olive oil
- 1 large onion, 1/2 chopped and 1/2 sliced
- 1 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 1/2 c. long grain brown rice
- 2 c. water
- 1/2 c. plain, low-fat yogurt
- pepper to taste
- Soak lentils in some hot water for 1 hour.
- Drain and place in a saucepan; cover with water by 2 inches.
- Bring to a boil; add 1/2 teaspoon of salt.
- Reduce heat and simmer 30 minutes or until tender.
- Saute chopped onion in 1 tablespoon of olive oil until golden.
- Add cumin, cinnamon and rice.
- Stir to coat with oil. Add water and lentils with their liquid, 1/4 teaspoon of salt and pepper.
- Stir; bring to a boil.
- Reduce heat and cover.
- Cook 25 minutes, until liquid is absorbed.
