Tom'S Green Chili Spoon Bread
- 2 c. milk
- 2 Tbsp. unsalted butter
- 1 tsp. salt
- 2 large eggs
- 2/3 c. white cornmeal
- pinch of sugar
- 1 (4 oz.) can mild green chilies, drained and minced
- 2 tsp. baking powder
- Preheat oven to 450u0b0.
- Generously butter loaf pan.
- Combine 2/3 cup milk with the eggs; beat well and set aside.
- In medium saucepan over low heat, combine remaining milk with the butter; bring just to a simmer.
- Increase heat slightly; add the cornmeal in a steady stream, stirring constantly.
- Stir in salt.
- Remove from heat; pour in egg mixture.
- Whisk until smooth.
- Add chilies; whisk to combine.
- Sprinkle baking powder over all; continue whisking to combine.
- Pour batter into dish; bake until puffy and golden, about 30 minutes.
- Serve immediately.
