Fiesta Tamale Pie
- 1 1/4 lb. ground lean beef
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 (16 oz.) can tomatoes
- 1 (16 oz.) can whole kernel corn, drained
- 20 to 24 pitted ripe olives
- 1 1/2 tsp. salt
- 2 to 3 tsp. chili powder
- 1 c. cornmeal
- 1 c. milk
- 2 eggs, well beaten
- 1 c. shredded cheese
- Heave oven to 350u0b0.
- In large skillet, cook and stir ground beef, onion and garlic until meat is brown and onion is tender. Drain off fat.
- Stir in tomatoes, corn, olives and seasonings; heat to boiling.
- Pour into an ungreased baking dish, 8 x 8 x 2-inch or 2-quart casserole dish.
- Mix cornmeal, milk and eggs and spoon onto meat mixture.
- Sprinkle cheese on top.
- Bake 50 to 60 minutes or until golden brown.
- Makes 6 to 8 servings.
