Fried Rice With Chicken

  1. Combine chicken, soy sauce and salt; let stand 15 minutes. In large skillet, melt Crisco.
  2. Add rice and cook over medium heat until rice is golden brown, stirring frequently.
  3. Reduce heat; add chicken mixture, bouillon granules and hot water.
  4. Cover; cook 20 to 25 minutes, until rice is tender.
  5. Add onion, green pepper and celery.
  6. Cook, uncovered, over medium heat until liquid is absorbed.
  7. Push rice mixture to side; add eggs.
  8. Cook until almost set; stir into rice.
  9. Stir in lettuce.
  10. Serve at once with additional soy sauce.
  11. Makes 6 to 8 servings.
