Grilled Caribbean Chicken Breasts
- 4 chicken breast halves, deboned and skinned
- 1/4 c. freshly squeezed orange juice
- 1 tsp. grated orange peel
- 1 Tbsp. olive oil
- 1 Tbsp. freshly squeezed lime juice
- 1 tsp. grated ginger root
- 1 clove garlic, minced
- 1/4 tsp. hot pepper sauce
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- In a large, shallow bowl, mix together orange juice, orange peel, olive oil, lime juice, ginger, hot pepper sauce and oregano. Add chicken, turning to coat.
- Cover and marinate in the refrigerator overnight or for at least 3 hours.
- Sprinkle chicken with salt and pepper and place on prepared grill about 6 inches from heat.
- Grill, turning, for about 10 minutes or until fork can be inserted in chicken with ease.
