Farmer'S Cookies
- 4 1/3 c. sifted flour
- 1 1/3 c. sugar
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 c. oleo
- 2 eggs
- 1 c. buttermilk
- 2 tsp. vanilla extract
- 1 tsp. lemon extract
- Sift the first 5 ingredients into bowl.
- Work in oleo (2 soft sticks) as you do for pie crust.
- In small bowl, beat eggs with fork slightly.
- Add buttermilk, vanilla and lemon extract to eggs. Add this mixture to flour and oleo mixture.
- Blend well.
- Dough will be sticky.
- Refrigerate at least 3 hours or overnight.
- Roll out on floured board.
- Flour rolling pin.
- Cut with floured cutter.
- Sprinkle cookies with sugar before baking at 400u0b0 for 12 to 15 minutes depending on thickness of cookie.
- Use large cookie cutter.
- Serve with butter or jam.
