Cake Mix Cookies
- 1 box of chocolate cake mix
- 1/2 cup oil (i used vegetable oil)
- 2 eggs, room temperature
- 1 1/2 cups mix-ins (chocolate chips, M&Ms, etc)
- 1.Preheat the oven to 375 degrees. Line two baking sheets with parchment paper. Set aside.
- 2.In a large mixing bowl, pour the prepared cake mix out of its plastic bag and add in the eggs and oil. Stir with a wooden spoon or plastic spatula until the dough is well combined.
- 3.Fold in the mix-ins into the batter. I made mine 3 ways by dividing the cookie dough into 3 even sections. I added white chocolate chips to one section, dark chocolate M&Ms to another section and chopped Andes Mints into the third section.
- 4.Scoop the cookies into 1 1/2 tbsp sized balls. Bake the cookies for exactly 7 minutes. Take out of the oven and let sit on the baking sheet for 3 minutes. Then let cool on wire cooling rack for about 5 minutes.
